Chicken with Mushrooms and Sausage
Preparation time: 2 hours. Serves 9-12
Ingredients
- 8 chicken breasts
- 1 lb Italian sausage, quartered
- 1/2 lb mushrooms, sliced
- 1/4 cup white wine vinegar
- 1 cup chicken broth
- 1 clove garlic, chopped
- 2-4 tbsp rosemary
- olive oil, garlic salt, salt, and pepper to taste
Directions
Preheat oven to 350 degrees.
Mix chicken broth, vinegar, garlic, and rosemary in a bowl or pitcher and set aside.
Season chicken with salt, garlic salt and pepper. Dip each piece in olive oil and place in a large roasting pan. Bake for 1 hour.
Sauté sausage and mushrooms in olive oil until brown.
Pour broth mixture over chicken, cover, and cook for 15 minutes. Mix sausage and mushrooms with chicken and return to oven for five minutes.
