Shrimp Pasta
Preparation time: 1 hour. Serves 12.
Ingredients
- 28 ounces tomatoes
- 1 pound large prawns
- 1/2 pound small scallops
- 3/4 pound small shrimp, cooked
- 3/4 pound angel hair pasta
- 2 medium-sized onions, chopped
- 2 cloves garlic, finely chopped
- 2/3 cup olive oil
- 2/3 cup dry white wine
- 1/2 cup fresh parsley
- 1 teaspoon salt
- Red papper flakes to taste
Directions
Heat oil in a large frying pan over medium heat. Add onion and cook until soft, stirring occasionally. Mix in garlic, tomatoes, wine, salt, and red pepper flakes. Bring to a boil, then simmer for 15 minutes, stirring occasionally.
Transfer half the sauce to a blender, puree, and return to pan.
Bring pasta water to boil. Add pasta and simmer until al dente. Drain well.
Add shellfish to sauce and stir over medium heat until cooked through (about five minutes). Combine with pasta and sprinkle with parsley. Serve immediately.
