Polenta
Preparation time: 90 minutes. Serves 4-6.
Ingredients
- 1 cup yellow corn meal
- 1 cup water
- 28 ounces chicken broth
- 1 Bermuda onion, diced
- 6-7 slices bacon
- Parmesan, grated cheese to taste
- Butter to taste
- Salt and pepper to taste
Directions
Cook bacon in a large frying pan. Add onion and cook until onion is soft and bacon is brown.
Combine corn meal and water in a sauce pan and bring to a slow boil. Incrementally add chicken broth and stir until all liquids are absorbed. Add Parmesan cheese, salt, and pepper to taste.
Pour polenta in a Pyrex dish. Add the rest of the bacon and onion mixture to decorate the top. Let cool, then cut into squares and serve.
TODO: Figure out how much of the onions and mushrooms to mix into the polenta and how much to leave back for garnish.
