Leg of Lamb
Preparation time: 4 hours. Serves 12-15
Ingredients
- 1 6-7 lb leg of lamb
- 1 1/4 cup Worcestershire sauce
- 1/4 cup flour
- 6 cloves garlic, halved
- 1 tsp rosemary
- salt and pepper to taste
Directions
Preheat oven to 325 degrees.
Make small, shallow holes with a sharp knife in the meaty part of the leg. Insert halved garlic clove in each hole. Brush lamb with Worcestershire sauce.
Mix together flour, salt, rosemary, and pepper. Coat lamb with flour mixture.
Place in roasting pan, flat side up on a rack. Insert meat thermometer so tip is in the thickest part of the meat.
Roast, uncovered, until temperature reaches 150 degrees (about three hours). Remove from oven and let stand for fifteen minutes.
Carve in thin slices and serve.
