Cream of Swiss Chard Soup

Ingredients

  • 14 ounces chicken broth
  • 1 pound chopped Swiss chard
  • 1 pint half & half
  • 1/4 cup butter
  • 1 cup chopped mushrooms
  • 1/4 teaspoon curry powder
  • 4 slices crisply-cooked bacon, crumbled
  • salt and pepper to taste

Directions

Simmer chard in the chicken broth until tender. Place in blender and blend until smooth. Add half & half and blend another minute. This will thicken the mixture.

Saute mushrooms in butter until tender, remove from heat.

Put all ingredients in a large pot and heat thoroughly while stirring constantly. Salt and pepper to taste.
