Chicken and Veal Scallopini
Preparation time: 1 hour. Serves 10-12.
Ingredients
- 2 pounds veal, sliced
- 1 pound chicken, deboned and sliced
- 1 pound fresh mushrooms, sliced
- 2 cups flour
- 2 cups chicken broth
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 2 tablespoons rosemary, finely chopped
- 12 large cloves garlic, minced
- salt, garlic salt, and pepper to taste
Directions
Cut veal and chicken into small, fillet-size pieces. Toss together in a blastic bag with flour, garlic, salt and pepper until pieces are coated. Fry in small batches (about four) until lightly browned. Place in a large baking dish . Add pan drippings.
In a separate pan, aute mushrooms with a small amount of oil. Add salt, pepper, and garlic salt. Cover and saute for a few minutes and set aside. This may be done ahead of time.
