Barley Pilaf
Preparation time: 2 hours. Serves 6-8.
Ingredients
- 2 cups pearl barley
- 4 cups beef broth or bouillon
- 1/4 pound butter
- 1 pound mushrooms, quartered
- 2 onions, chopped
- 1 jar pimentos, drained and chopped
Directions
Brown mushrooms and onions lighly in butter. Remove from pan and add barley. Brown until the color of toasted almonds.
Mix onions and mushrooms with barley, place in covered casserole, add three cups of broth.
Bake at 350 degrees for 90 minutes. After 60 minutes, add additional broth as needed. Add chopped pimento before serving.
